When I look completely up at a tree. Mind you placing my person to look into the sky, and then turn left or right, the leaves on the trees follow me. This never happened before morroblivion.
When I go into water, the game will freeze for 10-15 seconds, and I have to escape the water before the freeze happens again. Again, never happened before Morroblivion.

a) Trees: Are you sure that this didn't happen before morroblivion? As far as I know this is the way that speedtree works (leaves are 2d billboards that rotate about the Z-axis ... always facing the camera).
b) Water: Try disabling any water mods that you might have installed... and if that doesn't work then del;ete your oblivion.ini and try again.
None of these issues is related to morroblivion itself so ... closed (re-open if you think that there is a connection with morroblivion).
