First of all, I just want to say that this is my first post here, please don't eat me. :)
Right, so, I had been thinking about how Bethesda could go about making the best possible armor system for their sixth entry, and then it occurred that my solution could be implemented to the Skyrim engine through some scripting. At least, I think- See, I don't know Papyrus, and my coding experience is limited to C and some pseudocode. With that said, this is my idea:
Like in Skyrim, you have an armor set made up of the armor, gauntlets, boots, helm, and shield. In addition to this, however, you could alter your armor at a crafting station. You could come across or make a pauldron, but to equip it, you would have to add it on. You wouldn't logically be attaching pieces of armor together in the middle of the wilderness anyway, right? Through this system, you could encounter the barebones pieces of the armor, add on extra pieces that in effect, simply increase your armor rating without simply pounding on it with a hammer. Of course, you would come across enemies who are wearing already upgraded armor as well.
The reasoning that I had with this is that it allows the "average" player to only deal with a few pieces of armor, while the veteran can sport Morrowind's diversity in armor. Now, I am not the best 3D modeler either, as I really have only made small edits for myself, but, from my experience in Oblivion with NifSkope, I know that it was easy to remove a layer to the armor, and this same system could be applied to quickly make armors. I didn't exactly understand what was going on, but Ravanna mentioned doing something like that for armors anyway.
Now, any idea is not complete until you dissect the weaknesses:
How would enchanted items work? If you are not enchanting the pauldrons or greaves, but rather adding them onto an already enchanted piece of armor, would there be any way to keep the enchantment?
This is not the system that was used in Morrowind. From what I understand, you guys are going to be able to make separate pieces of armor equip-able like in Morrowind, with the exception of mixing layers of clothing and armor on top of each other.
Anyway, it is just an idea, I hope this has not been said already. I am aware that people have addressed the issue before, but, to my knowledge, not in this way.

As far as I know, armor
As far as I know, armor pieces are clipping with each other when separate on Skyrim's skeleton or something like that. The reason to make them whole as in vanilla game is purely technical.
However I'm not the person doing armors, so can be wrong.
