Currently, the only way to make it so you can have the oblivion opening instead of the morrowind one is to completely deselect the data files, open the game, start a new game, then save, exit, reactivate the data files and start up the game again. That process is inconvenient, so ,if it is possible, can you make it so that there is a selector thing when you press new game so you can have either start?

There is a much easier way to configure where to start a new game that is built into the \Oblivion\Data\ini\Morroblivion.ini file. Open that file and find the following line:
and change it to this (to start in Oblivion):
